La climatología durante el ciclo vegetativo de la vid fue buena, con temperatura media de 14º desde abril a septiembre. Las lluvias fueron escasas, verano caluroso por el día con inversión térmica por la noche .
Una vez que los índices de maduración externos (impresión visual, táctil y gustativa), así como lo parámetros de maduración químicos de las muestras de uva dieron su nivel óptimo, procedimos a la vendimia. Esta se realizó los días 21y 22 de septiembre de 2018 a primera hora de la mañana con temperaturas inferiores a los 20 grados. Seleccionamos cuidadosamente los racimos uno a uno que fueron transportados a la bodega en pequeñas cajas de 18kgs. Después del proceso de despalillado y estrujado, se procedió al prensado. Este fue suave y lento, para procurar una pequeña maceración pre-fermentativa en prensa neumática con una extracción de mosto de aproximadamente 61 litros por 100 kilos de uva.

THE HARVEST (2018)
Good weather accompanied the vine’s vegetative cycle, with temperatures averaging 14° between April and September. Rain was sparse. During the summer, the days were hot and the nights presented a thermal inversion.
Once the external signs of ripening (visual, tactile and taste), as well as the grape sample chemical analysis monitoring reached its optimum level, we proceeded to harvest.
This took place in the below 20 degree early morning of September 21 and 22, 2018. One by one, we carefully selected the clusters. Then, we transported the grapes to the winery in compact 18kg boxes.
After destemming and crushing, the pressing process began. This was smooth and slow, ensuring a slight pre-fermentation maceration in a pneumatic press that has a must extraction of approximately 61 liters per 100 kilos of grapes.
De la cosecha de 2018, calificada por la D.O Ribeiro como “Muy Buena”, recogimos un total de 6.269 kgs. de uva de gran calidad, de los cuales seleccionamos 4.300 kgs. para la elaboración de nuestra añada Javier Vasallo 2.018 lo que nos permitió embotellar a penas 3.500 botellas, todas ellas numeradas en la etiqueta y contra etiqueta. Realizamos la fermentación en depósitos de acero inoxidable y en barricas de roble francés. Una vez finalizada ésta, el vino permanece en reposo con sus lías finas. Utilizamos el sistema de “batonnage” en las barricas. Después de 8 meses de maduración, bajo la estrecha vigilancia de Montse y Alfonso, nuestros enólogos, procedimos a embotellar a mediados de junio de 2019. Nuestra viticultura es respetuosa con el medio ambiente y de producción sostenible. Los procesos enológicos utilizados en su elaboración han sido idóneos para respetar la tipicidad varietal. El vino Javier Vasallo mantiene el equilibrio de los aromas primarios de fruta de las variedades autóctonas de su procedencia: treixadura, godello, albariño y loureira y los aromas especiados terciarios, aportados por una sutil madera, transmiten el sabor y la esencia de esta tierra: El Ribeiro. Una vez embotellado, el vino se dejó reposar en bodega aproximadamente un año. A finales del verano de 2020, empezamos a servir a nuestros clientes esta nueva añada.

THE WINE
The 2018 harvest, classified as "Very Good" by the D.O. Ribeiro, produced a total of 6,269 kgs of superb quality grapes from which we selected 4,300kgs for the production of our Javier Vasallo 2018 vintage. We produced 3,500 bottles, each numbered on the front and back label. Fermentation took place in stainless steel tanks and French oak barrels. Once finished, the wine was aged on fine lees with bâtonnage in the barrels. After 8 months of maturation, and under the close supervision of our winemakers, Montse and Alfonso, we proceeded to bottle in mid-June 2019. Our viticulture respects the environment and sustainable production. The optimal enological processes used during elaboration uphold varietal authenticity. Javier Vasallo wine maintains a delicate balance between the dominant fruit aromas found in its native varieties: Treixadura, Godello, Albariño, Loureira, and the tertiary, spicy aromas derived from the subtle French oak wood. Together, they transmit the flavor and essence of this land: The Ribeiro. After bottling, the wine rested in the cellar for approximately one year. We began serving our customers this new vintage at the end of the summer of 2020.
Color amarillo brillante.
En nariz, las notas varietales de fruta de pepita (manzana y pera) y también fruta de hueso (melocotón) así como elegantes notas de flores blancas, junto con aromas más complejos de crianza (tostados, brioche) enriquecen la paleta aromática.
En boca es elegante, intenso, voluminoso y amable en el paso, con buen equilibrio y textura aterciopelada. Largo y persistente.

TASTING NOTE
Color, a brilliant yellow. On the nose, you distinguish a variety of fruits: apple and pear, along with peach. Elegant notes of white flowers blend with the complex aging aromas (toasted and brioche). Together, all enrich the aromatic range. On the palate, it has an intense, elegant and voluminous body. The finish is most pleasant, giving rise to a balanced, velvety texture that is long lasting. Genuine sensations of variety and terroir.
